Black Forest BubbleHash Cherry Cake

Hola dear friends of chilled baking,

By special request, I have made a recipe for a Black Forest cake. It took some baking and tasting tests to get it right. The cream caused me the most headaches. First I made cannabis cream. It doesn't look good and it doesn't really taste good in the cake. The solution is cream with hashish, preferably BubbleHashIt looks much more neutral and doesn't taste too obtrusive 😉 So here's the recipe for my Black Forest BubbleHash Cherry Cake:

Ingredients:Cake Black Forest

  • 100g Cannabis butter
  • 100g sugar
  • 1 pck. vanilla sugar
  • 4 eggs
  • 70g ground almonds
  • 100g cocoa powder
  • 50g flour
  • 50g cornflour
  • 2 tsp baking powder
  • 7 tablespoons kirsch
  • 500ml cream
  • 5-8g BubbleHash
  • 750g sour cherries
  • Chocolate shavings

Preparation:

Grease the base of a springform pan and pre-heat the oven to 160°C.

Beat the Cannabis butter sugar and vanilla sugar with a hand mixer until fluffy, then add the eggs, almonds and cocoa powder. Sift the flour with the cornflour and baking powder and fold in. Pour the batter into the greased springform pan and bake in the lower third of the oven for about 35 minutes. Leave the cake base to rest for 12 hours, then cut it in two horizontally. This is best done with a long, thin thread.

Heat the cream in a pot and simmer the finely chopped BubbleHash in it for 1.5 hours on a low setting. Then let the cream cool down and put it in the fridge for at least 5 hours so that it gets really cold.

Drizzle the bottom plate with the kirsch. Whip the BubbleHash cream with a little sugar until stiff. Drain the cherries, spread about 2 cm of the BubbleHash cream on 2 bases and spread the cherries on top. Spread only the cream on the top layer and sprinkle with the chocolate shavings. Pipe 16 cream rosettes onto the cake and decorate each with a cherry.

    The hash cream didn't really set for me. With starch it worked!
