Marijuana Apple Almond Slices

Our apple and almond slices are the ideal end to our menu and finish the evening with a high, fruity delicacy. We prefer to use red-cheeked, unpeeled apples, as the skins shine beautifully. If you don't like this, you can of course peel the apples and bake the cake a few minutes shorter.

Ingredients:

  • 2 tbsp. coconut cannabis oil
  • 4 small red-cheeked apples (e.g. Gala or Pink Lady)
  • 160ml maple syrup
  • 4 tsp vanilla extract
  • 135g oat flakes
  • 260g almond flour
  • 75g barley flour
  • 1 ½ tsp baking powder
  • 60ml olive oil
  • ½ tsp almond extract
  • 2 tbsp apricot jam

Preparation:

Preheat the oven to 160°C and lightly grease a baking tin (23x23cm) and line the bottom and 2 cm of the sides with baking paper.
Then cut the apples into 1cm thick slices and fry them in a pan over medium heat together with the coconut cannabis oil for about 5 minutes until the apples turn a golden colour.

As soon as the apple slices are golden, stir in 1 tbsp. maple syrup and 2 tsp. vanilla extract and fry the apples for another 6 to 8 minutes on a low heat until they brown but do not fall apart. If the apples are still firm, they can be stewed over a low heat with the pan covered for a few more minutes.

For the dough, finely grind the oat flakes in a food processor and then mix well together with the almond flour, barley flour and baking powder. Then, in a bowl, mix the maple syrup with the remaining vanilla extract, the olive oil and the almond extract and stir together with the flour mixture to form a dough.

Carefully press the dough into the prepared baking tin and bake in the oven for 18 minutes. Then remove the baking tin from the oven and cover with the apple slices. Press these lightly into the pastry, leaving about 1cm of border all around. Then bake the cake in the oven for another 20 to 25 minutes until the edges are golden brown.

When the cake is done baking, remove it from the oven and let it cool completely. Then turn the cake out onto a flat tray or cutting board, remove the baking paper and turn the cake over again and place it on a tray.

For the glaze, heat the apricot jam in a small saucepan, stirring until it melts. Glaze the cake with a pastry brush and serve at room temperature.
