Rainbow curry enriched with cannabis
Winter is here and there's almost nothing better than an aromatic and cannabis-infused curry to brighten up the winter months a little. If you're looking for something delicious, exotic and healthy at the same time, the following recipe is a great choice.
All the ingredients are easy to find and the dish can be made in one pot. This way you can prepare a dinner in very little time. The curry sometimes tastes even better the next day. You can decide how much cannabinoids and potency you want in the dish and use the cannabis oil you like best. Use a highly potent cannabis oil if you are already experienced with it, are looking for a heavy high and have a higher tolerance, or go for a hemp oil that is enriched with CBD and has only mild or no psychoactive effects if you only want to reap the medicinal benefits. It's up to you.
For 3-4 persons
Ingredients:
- ½ can white beans
- ½ can kidney beans
- 1 sweet potato
- ½ can coconut milk
- 1 chopped tomatoes
- 1 cup peas
- 1 teaspoon grated ginger
- 1 teaspoon grated garlic
- a pinch of cumin
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 2 tablespoons chopped coriander
- 1 tablespoon vinegar
- 2 red onions
- 1 teaspoon chilli powder (optional)
- 2 tablespoons water
- 1 tablespoon olive oil
- 2 tablespoons cannabis oil
- a pinch of salt
- Chop the onions and sweet potatoes into small pieces. Grate or chop all the herbs and spices and set aside on a plate.
- Heat a tablespoon of oil in a pan and add the cumin seeds until you hear a cracking sound.
- Add the onions and sweet potato to the pan until they brown and then add a dash of water.
- Then add the ginger and garlic and cook for 2 minutes
- Next, add the tomatoes, stir and cook for 3-4 minutes.
- Add salt, curry powder and turmeric and stir for 1 minute
- Now add the 2 types of beans, the frozen peas and then the coconut milk and stir for 30 seconds.
- Simmer the curry over a low heat for 5-6 minutes.
- Add the chopped coriander, stir in the vinegar and test the taste.
- Once the curry has cooled slightly, add two tablespoons of hemp oil or cannabis-infused oil, if desired.
- Serve with brown rice, basmati rice or even rainbow rice. This is not only an eye-catcher but also tastes extremely good.
Rainbow rice is easy to make with natural colourings. Cook a handful of grated carrots, shredded spinach leaves, red cabbage, peppers and/or beetroot separately with a little water until soft. Then pour the coloured liquid through a coffee filter and mix it with white cooked rice until the rice has taken on the colour evenly.
